STAR Cinnamon pancake with trailmix and sesame seeds. I’ve put a lot of pancakes up here, but this one beats them all. Made with half white flour and half whole wheat, tbsp baking powder, 3 tsp cinnamon, and the visible topping put on after cooking (trailmix and sesame seeds), covered with syrup (fake maple).

Ingredients: Sweet potato, garlic, oregano, basil, coriander, thyme, cinnamon, sugar, 2 hot dogs (in this case soy), red wine and all fried in olive oil. The reason for the ‘ those who love…’ is because I put in 8 garlic cloves. Now you may think that is overdoing it. But if you look at the health benefits of garlic, you will probably want to put in more, but then there are other people out there who may not actually care how healthy you are as long as you stand no closer than 4 feet. If you are a hermit than you can be as healthy as you like, and your dog or cat won’t care (maybe because they love you). The amounts of the herbs and spices is an individual thing, but again, they have very important health properties which are often overlooked as we sprinkle only a teaspoon or less of an herb or spice on our food. Give yourself a break. Some of the greatest health additives are within arms reach and we spend most of our lives ignoring them (to our detriment). I literally just dump them on. Check them out at whfoods.com  But, before I end this entry, a word about sweet potatoes – They are particularly rich in antioxidant, and anti-inflammatory healing properties, and have been placed by some at the top of the vegetable nutrition list.

 

 

mudge2Egg Salad Sandmudge. I’ll come clean. This is the result of two fortuitous events. First, the fact that I really did not want to cook – happens quite often – and secondly, the fact that I heated the single person bread loaf and tried to slice it in half while still in the pan and hot. It sort of crumbled before my eyes as I tried not to burn my fingers, so ended up cutting it into small pieces. It all happened quite fast. Then, I dumped in the egg salad which had been prepared (mayonnaise, turmeric, and cayenne pepper), a good healthy glob of hummus with tahini, and two slices of cheese all the while continuing to cook until well mixed and the cheese melted. Really quite good. Will I do it again? Definitely, and with a good red wine to go with it.

Another way to get an apple into you, albeit over a couple of days. I have not perfected the procedure of making this pie yet (testified to by the time it took me to remove the burned cake stuck to the bottom of the pan). Would appreciate any input. Started with an individual flat bread loaf, an apple, brown sugar, cinnamon, nutmeg, ginger, trail mix (mainly for the raisins). Bread cut in half and sliced inside to form two pockets. Put into a pan with sugar water and brought to a boil and let steep to impregnate with sugar. A better way of doing this might be to merely fill the halves with the described cooked apple, and then paint the outsides of the slices with a heavy sugar water solution. Sliced apples boiled in a small amount of water with sugar, cinnamon, very little nutmeg and ginger until most of the liquid is evaporated at which point the bread halves are filled, and then “fried” until everything is well integrated. This is sort of labor intensive but better than attempting to “Bake” apple tarts from basic flour and water – especially in a frying pan.

 

 

eggtortillasEgg Salad Tortillas. It seems that I was down to one egg, and now I’ve none. The mayonnaise is also gone. And the last of the tortillas which had long been in the rear of the freezer forgotten. The last meal before having to go to the store if I want to continue. Fortunately, I do have some wine left. Slight fried the tortillas to unbend them – the cleft left when prying them apart. With tomatoes and all of the usual spices including red hot pepper. Also very good without wine. That is an untested statement.

 

 

tomatoriceVery Good Down On My Luck Rice. It’s raining outside, I don’t feel like going out, I’m down to my last couple of dollars for the month, and what you see here is what I have left in the cupboard or the fridge. Rice with 3 tbsp miso (soy paste for protein), two tbsp tomato paste, four cherry tomatoes halved, some wine (red sweet made in Russia. Amount up to you), and a lot of basil, turmeric, oregano, thyme, garlic powder, plus black pepper (dash), salt (very little), tbsp brewer’s yeast for the vitamin Bs. Oh, those seed things? Toasted and salted pumpkin seeds. Makes the meal last longer. Can’t think of anything while I’m chewing them so gives me a break. Eat them whole and then spit out whatever is left, if there is anything. Why eat them? Very good source of zinc against osteoporosis, anti-inflammatory against arthritis, good source of magnesium, manganese, phosphorus, iron, and copper, and third after pistachios and sunflower seeds in the amount of phytosterols which is a plant cholesterol (as opposed to animal cholesterol) and is good for the immune system, plus may be effective in reducing risk of certain cancers whfoods  Plus I just like the taste and the salt. Oh, and that’s the last of the hummus with olive oil and sweet paprika.
